Is there anything you can’t make with beer? A few weeks ago I was having a fun conversation on Twitter and someone noted a desire for pancake flavored beer. This inspired me to do just the opposite, and craft my favorite breakfast meal using some delicious Short’s Brewing Cup A Joe Coffee Cream Stout. It was a perfect beer to use for breakfast with the already added coffee flavor.
I turned to my dear friend Betty Crocker for the pancake recipe, and simply replaced most of the milk for beer. Any beer would work, but I would recommend a stout, porter or brown ale for the best flavor.
Ingredients
- 1 large egg
- 1 cup flour
- 2/3 cup beer
- 1/3 cup of milk
- 1 tablespoon brown sugar
- 2 tablespoons of vegetable oil
- 3 teaspoons of baking powder
- 1/4 teaspoon salt
- butter
Step 1
In a medium bowl beat the egg until fluffy, then add all ingredients except the butter.
Step 2
Grease your griddle or pan with butter, and warm to a medium heat.
Step 3
Pour desired amount of batter for each pancake, flip after the top is bubbling, and until each side is nice and browned.
Step 4
Pile a stack full of stout cakes on to your plate, and top with syrup (made from beer of course).
Beer Syrup
It’s actually really easy to create syrup out of beer. Just pour the remaining beer not used in the pancake batter into a small pot, boil and add brown sugar. Boil for about 10 minutes or so until the mixture takes on a thick syrup like consistency. It’s very important to let the beer sit out open over night to remove some of the bubbles before attempting this. Trust me, I learned the hard way.
