blueberry mint vodka lemonade

This year I decided to try out my green thumb, and planted vegetable, strawberry and herb gardens. The herbs were the first thing to get planted, thanks to some seedlings from the Product Station. I planted parsley, rosemary, dill, chives, oregano, thyme,  mint and chocolate mint. They are all growing in abundance, and so now I’m fronted with the issue of what to do with them all. The mint is growing the best of them all, and I decided I would test out a batch of blueberry mint lemonade.

It wouldn’t be a true summer cocktail without the addition of alcohol, so I also added in some delicious wheat vodka from Grand Traverse Distillery.

Ingredients

  • 1/3 cup fresh mint
  • 1 cup of blueberries
  • 4 cups of water
  • 3/4 cup sugar
  • 1 cup freshly squeezed lemon juice (about 1 bag or 8 lemons)
  • 1 cup of vodka

Step 1

Squeeze the juice from a bag of lemons using a juicer or by hand to get a cup of lemon juice.

Step 2

In a blender, add the water, lemon juice, mint leaves, blueberries, and sugar. Blend until mixture turns a nice pink color.

Step 3

Let the mixture sit for at least an hour, then strain out the pieces of blueberry and mint leaves. Add in your vodka, chill and serve!
