cherry tequila popsicle

Hot summers call for refreshing treats! July was one of the hottest summers on record for Michigan and that led to some icy and fruity cravings. I was shopping on Amazon and this book on Paletas kept popping up, which didn’t help the cravings so I did a search and found this awesome Cherry, Sour Cream and Tequila Paleta recipe.

I’ve been looking for something to make with New Holland Spirits Hopquila, a tequila clone that is a twice distilled,  fermented wash of 100% barley, steeped with Centennial hops. And thus I found it. The ingredients may seem a bit crazy, but I assure you these are a yummy, refreshing, adult summer treat.

Ingredients

  • 8 ounces of pitted and stemmed Michigan Cherries (any cherries will do, but eat local)
  • 2 teaspoons of lemon juice
  • 3 tablespoons of New Holland Hopquila
  • 1 1/2 cups of milk
  • 1 1/2 cups of sour cream
  • 1/2 cups of sugar
  • 1/3 cups of powdered sugar
  • 1 teaspoon of vanilla

Step 1

In a medium saucepan add the cherries and powdered sugar and put on medium heat until the sugar dissolves. Add in lemon juice and continue cooking on low heat until the mixture thickens.

Remove the mixture from heat when it reaches a syrup consistency and add the Hopquila. Then refrigerate until cool.

Wash out the pan, or if you have another one pull it out. Add in the milk, sugar, vanilla, and a pinch of salt into the pan over medium heat. Heat until the sugar dissolves, then remove from heat and stir in the sour cream. Put the mixture in the refrigerator until cool.

Once both mixtures are completely chilled, bring them out. Drain the cherries, we’re not using the juice for this recipe. I may or may not have drank the juice instead of setting aside.

In your popsicle holders, pour a layer of the cream mixture, then add some cherries, then another layer of cream, and some more cherries. It’s advised to get in there and stir everything around, those cherries are pretty potent! Once the containers are filled, toss into the freezer overnight.

Step 6

When you’re ready to treat yourself, bring out a frozen popsicle and run under warm water for a few minutes, the frozen treat should slide right out. Enjoy!
