This recipe is similar to the Founder’s Breakfast Stout Stew – but with chicken! We all know that throwing things in the crock pot with beer is a favorite activity of mine, especially when the end result ends up tasting so good! Founder’s Breakfast Stout is such an amazing beer, that it’s hard to imagine anything tasting bad with it as an ingredient. So without further ado – here is my recipe for Chicken Stout Stew!
Ingredients
- 3 boneless, skinless chicken breasts
- Small bag of frozen peas
- 1 container of baby bella mushrooms
- Half a bag of baby carrots
- 1 yellow onion
- 1 12oz bottle of Breakfast Stout
- 1 cup of chicken broth
- 1 tablespoon of brown sugar
- 1 tablespoon of Worcestershire sauce
- 1 teaspoon of thyme
- 3 cloves of minced garlic
- salt and pepper to taste
Step 1
Turn the crock pot on to high, and add in the chicken, carrots, onion and mushrooms, liquids, and spices. Cook for 5-7 hours. I added my chicken in while it was still frozen (because I’m lazy).
Step 2
About a half hour before serving, add in the frozen peas. I also created a roux to thicken things up a bit, by melting butter and flour in a frying pan, and then adding a little of the liquid from the crock pot. Then I added the mixture back into the stew. After the half hour is up, serve with some yummy beer bread.
