I was playing around on Pinterest and saw a recipe for Strawberry Daiquiri cupcakes – yep, that’s how I ended up spending my evening. These were super easy to make, and extremely delicious. They’d be great for a bachelorette party or shower. I decided to make mini-cupcakes instead of the larger ones, and I used New Holland Spirits Freshwater Huron White Rum. A warning – you can really taste the rum- which I thought was fantastic!
Ingredients
- 1 box of strawberry cake mix
- 3 eggs
- 1/3 cup of oil
- 1/2 cup of rum
- 1/2 cup of strawberry puree
- 6-8 cups of powdered sugar
- 1 3/4 sticks of butter
- 1/4 cup of rum
- 1/4 cup of strawberry puree
Step 1
Preheat the oven to temperature on cake mix box. Grease mini cupcake pan. Dice up fresh strawberries, soak in rum while making the cupcakes.
Step 2
In a large bowl, blend the cake mix, and eggs and oil based on the instructions from the cake mix box. Replace the water with the rum and strawberry puree. My cake mix box called for a cup of water, so I added a 1/2 cup of rum, and 1/2 cup of puree.
Step 3
Pour the mixture into cupcake pan, cook for 12-15 minutes.
Step 4
Mix butter, powdered sugar, rum and puree until thick and smooth. I put mine in the freezer to harden while the cupcakes were cooling. Once cool, frost the cupcakes and top with a rum soaked strawberry. (Leftover rum from soaking strawberries can be reused for a nice drink.)
